QUICK ROLLS 
1/4 c. shortening
2 tbsp. sugar
1 egg
1 tsp. salt
3 1/4 c. flour (bread or all-purpose)
1 pkg. yeast (quick hot yeast)
1 c. lukewarm water

Stir yeast into lukewarm water; set aside. Mix shortening and sugar. Stir in egg and mix well. Add flour and salt, stir until crumbly. Stir in yeast and water; mix well.

Turn into greased bowl, cover and let rise until double in bulk. Punch down and turn out onto floured board using the 1/4 cup flour. Knead for 2-3 minutes. Cut out and put on greased cookie sheet. Brush with melted butter if desired. Let rise until double in bulk. Bake at 375 degrees until brown (10-12 minutes). Brush with melted butter and tops will be soft. Wheat Rolls - Substitute half wheat flour.
