RHUBARB CUSTARD PIE 
For 9" pie
3 eggs
3 tbsp. milk
2 c. sugar
1/4 c. flour
3/4 tsp. nutmeg
4 c. cut up rhubarb
1 tbsp. butter

Heat oven to 400 degrees. Beat eggs, slightly. Add milk. Mix sugar, flour and nutmeg. Stir in mix in cut rhubarb. Pour into pie shell. Dot with butter. Cover with pie shell. Bake 50-60 minutes. Cover edges of shell with narrow strips of aluminum foil, take off last 15 minutes of baking to brown edges slightly.
