CUKE SALAD WITH CARROTS 
5 cukes, partially peeled and thinly sliced
2 handfuls grated carrots
2 1/2 c. green onions, finely sliced
2 tsp. dry parsley

DRESSING:

1/2 c. vinegar
1/2 c. water
4 tbsp. sugar
1 tbsp. seasoned salt
1/2 tsp. garlic powder

Combine dressing ingredients. Pour over cuke mixture and marinate a few hours before serving.

Note: No mayonnaise or sour cream.
