OATMEAL SPOON BREAD | |
5 1/2 c. flour 1 pkg. yeast 4 tsp. salt 1 c. quick oatmeal 2 c. warm water 2 eggs 6 tbsp. shortening 6 tbsp. honey (or molasses) 1/2 c. raisins (optional) In large bowl combine 2 cups flour, yeast, salt, oatmeal; mix well. Add water, eggs, shortening, honey; blend at low speed until moist. Then beat 3 minutes at medium speed. By hand, gradually add remaining flour to make stiff batter. Cover and let rise 1 hour. Spoon into 2 greased loaf pans and let rise (covered) until double (1/2 hour). Bake at 375 degrees for 35-45 minutes. |
