NOODLES AND RICOTTA 
1 lb. noodles
6 tbsp. butter
1 lb. Ricotta
Salt and pepper
Romano cheese

Boil noodles and drain well. Melt butter in a large saucepan. Add Ricotta. Blend over low heat; add salt and pepper to taste.

When noodles are done and drained, add to butter and cheese mixture. Toss together until well coated. Serve at once with grated Romano cheese on top.
