"ORZO" 
1 box Prince or La Roza Orzo (pasta)
1 VERY LG. Spanish onion or 3 sm. onions, coarsely chopped
2 to 3 cloves FRESH garlic, minced or pressed
Salt to taste
FRESHLY GROUND pepper to taste
2 cans mushrooms, stems & pieces or sliced, drained liquid from mushrooms
4 big stalks celery, cut in 1 inch pieces
1/4 lb. butter

Boil orzo according to directions on box, but ONLY UNTIL firm, drain. Saute in butter, onion, garlic, mushrooms and celery until soft, not MUSHY. Add salt and pepper. Combine onion mixture with drained orzo. Add mushroom liquid. Taste for seasonings. Mix well. Either serve or transfer to casserole and reheat (covered, fluffing with fork). May be made 2 days in advance or frozen.

NOTE: This dish is only as good as the seasonings you put into it so season until it suits your taste. Diced green or red peppers may be added (when frying onions) and snipped FRESH dill or parsley. For smaller amount, cut recipe in half.
