OLD-FASHIONED CUSTARD PIE | |
STEP 1: Scald 2 1/2 cups milk. Lightly blend 4 whole eggs together just enough to mix yolks and whites. Stir in 1/2 cup sugar, 1/4 teaspoon salt and 1/8 teaspoon nutmeg. Then while stirring slowly, add the scalded milk. STEP 2: Preheat oven to 400 degrees. Line 9-inch pie plate with standard pastry rolled about 1/8 inch thick. Adjust standing rim. Set pan on oven rack and pour in custard. STEP 3: Bake pie 25 to 30 minutes at 400 degrees, testing for doneness after 25 minutes by inserting a knife in the center of the custard. If the knife comes out clean, custard is set and pie should be removed from the oven. STEP 4: Slice pie only after it is thoroughly cool. Custard pie is best served on the same day it is baked. Pie must be refrigerated after it is cool. |
