BANANA GRIDDLE CAKES 
Bake on hot griddle (357 degrees F.).

Sift together in mixing bowl:

1 c. flour
2 tbsp. sugar
2 tsp. baking powder
1/4 tsp. salt

Combine:

1 beaten egg
3/4 c. milk
2 tbsp. melted butter
1/3 c. (about 1 med.) mashed bananas

Add to dry ingredients all at once. Beat quickly just until large lumps disappear (with electric mixer use low speed).

Bake on hot griddle (use 2 tablespoons batter for each pancake). Turn when edges start to dry. Serve with hot butter and maple syrup. Makes 8 to 10 servings.
