OVEN BARBECUE CHICKEN 
2 1/2 - 3 lbs. frying chicken, cut into serving pieces
1/4 c. water
1/4 c. vinegar
3 tbsp. oil
1/2 c. chili sauce or catsup
3 tbsp. Worcestershire sauce
1 tbsp. dry mustard
1/2 tsp. pepper
2 tbsp. chopped onion (optional)

Preheat oven to 350 degrees. Combine all ingredients, except chicken, in a saucepan and simmer 10 minutes. Wash and dry chicken and place in a large baking pan. Pour half of the barbecue sauce over the chicken and bake, uncovered, for 50-60 minutes. Baste with remaining sauce every 15 minutes.

Instead of baking, the chicken may be immersed in the sauce, then removed and cooked over charcoal, basting frequently. This recipe yields 4 servings at approximately 260 calories per serving.
