EASY GARDEN VEGETABLE PIE 
2 c. chopped broccoli or sliced cauliflower
1/2 c. chopped onion
1/2 c. chopped green pepper
1 c. shredded cheddar cheese
1 1/2 c. milk
3/4 c. Bisquick baking mix
3 eggs
1 tsp. salt
1/4 tsp. pepper

Heat oven to 400 degrees. Lightly grease pie plate. (I always use glass 10 x 1 1/2 inch pie plate.) Cook broccoli about 5 minutes in boiling water. Drain thoroughly. (May use 10 ounce package frozen broccoli or cauliflower.) Mix broccoli, onion, green pepper and cheese in pie plate. Beat remaining ingredients until smooth 15 seconds in blender on high or 1 minute with hand beater. Pour over ingredients in pie plate. Bake until golden brown, 35 to 40 minutes. Let stand 5 minutes before cutting. 6 servings.
