WASHINGTON APPLE CAKE 
3 eggs
1 1/2 c. sugar
1 c. oil
2 c. flour
2 tsp. cinnamon
1/2 tsp. salt
1 tsp. vanilla
1 c. chopped nuts
1 tsp. baking soda
4 c. thinly slice Washington apples (5 or 6)

Beat eggs until light and thick. Add sugar and oil. Beat. Add dry ingredients and beat well. Arrange apples in well buttered 13 x 9 x 2 pan. Sprinkle nuts on top of apples, top with batter. Bake at 350 degrees for 1 hour. Cool and turn out of pan. Frost with cream cheese frosting.

CREAM CHEESE FROSTING:

2 (3 oz.) pkgs. cream cheese, softened
1/4 c. melted butter
2 c. powdered sugar
1 tsp. lemon juice

Beat until smooth and fluffy.
