GARLIC GRITS 
3 c. water
1 c. grits (quick or instant)
1 tsp. salt
1 stick butter
1 roll garlic cheese
2 eggs, beaten
1/2 c. milk
Pinch paprika
Pinch cayenne (hot) pepper

Put water into Dutch oven and bring to boil. Add grits stirring constantly. Cook 5 minutes. Set off burner. In small sauce pan melt butter and cheese. Pour into grits and mix well. (I use small hand held electric mixer, but you could mix it by hand.) In metal bowl beat eggs. Beat before getting beaters in cheese. Add milk and mix. Slowly pour into grits, mixing well. Add paprika and pepper. Be sure to mix the grits that are in corner. Pour into greased baking dish. Sprinkle with paprika. Bake at 350 degrees for 45 minutes. Serves 8. I double the recipe and bake in souffle dish for pot luck dinners. It has always been a hit.
