BEEF STEFATHO 
5 lbs. lean beef cubes
1/4 c. olive oil
3 (8 oz.) cans tomato sauce
1 c. red wine vinegar
1/4 c. burgundy wine
1 head garlic, mashed
1 (16 oz.) can onions

SPICES:

Cloves
Whole allspice
1 bay leaf
1 garlic head

Saute beef in olive oil. Add tomato sauce, vinegar, wine and garlic, and salt and pepper. Cook for about 2 hours on low heat, until meat is done. Enclose spices in cheesecloth and tie (to look like golf ball). Cook in meat and sauce. When cooked, add the can of onions and cook for another 10-15 minutes.
