CREAM CHEESE AND APRICOT FLAN 
PASTRY:

1 c. flour
Pinch of salt
1/4 c. butter
Cold water

FILLING:

1/2 lb. cream cheese
1/3 c. sugar
1 can apricot halves

GLAZE:

2 tbsp. red currant jam
2 tbsp. water
1 tbsp. lemon juice

1. Sift the flour and salt into a mixing bowl. Rub in butter with your fingertips until mixture looks like fine bread crumbs. Add enough cold water to form a stiff dough. Chill before rolling out. Roll out to a thickness of 1/8". Line the bottom of a flan case and bake in a 450 degree oven for 15 minutes.

2. Cream the cheese and sugar together. Spread over the bottom of the flan case.

3. Drain the apricot and arrange on the cheese mixture, cut side down.

4. Make the glaze by cooking the jam, water and lemon juice in a small saucepan until dissolved. Then boil briskly until slightly tacky. Pour over the fruit. Serves 6.
