1/4 cup butter, room temperature
1/2 cup cottage cheese
3/4 cup sugar
1 teaspoon vanilla
1 large egg
2 cups all purpose flour
1 teaspoon cinnamon
1/2 teaspoon salt
3/4 cup golden raisins
1 cup peeled and roughly chopped apples

Set oven at 375°F.

Grease a cookie sheet. Combine well the butter and cottage cheese. Mix in both the sugar and vanilla, then mix in the egg.

In a separate bowl, whisk together the flour, cinnamon, baking soda and salt. Combine the flour mixture with the butter and salt, a little at a time, until mixed together. Stir in the raisins and chopped apples.

Scoop the dough, about 2 tablespoons at a time, and set on cookie sheet 2 inches apart.

Bake about 12 minutes or until golden brown. After baking, cool on rack.
