ZUCCHINI CASSEROLE 
2 c. diced zucchini
1 diced onion
1 chopped green pepper
1 c. mayonnaise
1 c. grated Italian cheese (Parmesan)
2 eggs
Salt and pepper
Bread crumbs and dabs of butter

Boil until tender and drain zucchini; mix together all ingredients except zucchini. Fold in zucchini well. Put into greased 1 1/2 quart casserole. Add bread crumbs and butter. Bake at 350 degrees for 30-45 minutes.
