K.'S KILLER PIZZA | |
1 pkg. (or 1 tbsp.) active dry yeast 3/4 c. warm water 1/2 tsp. sugar 1/2 tsp. salt 2 tbsp. olive (or veg.) oil 2 c. all purpose flour (double for large pan or extra thick crust) Dissolve yeast in water. Stir in sugar, salt, oil and 1 3/4 cups of the flour. Turn onto well floured surface. Knead until smooth and elastic working in reserved flour as necessary. Grease pizza pan and pat dough out to edges. SAUCE: 1 small can tomato sauce, 1 small can tomato paste, 1/4 tsp. minced garlic, 1 tsp. basil, 1/2 tsp. oregano leaves, 1/2 tsp. thyme, 1/2 tsp. fennel. Mix together and microwave to thicken and reduce and to blend flavors (approximately 3 to 5 minutes, I usually do it while mixing crust and chopping other toppings, etc.) TOPPING: Italian sausage, onion, mushrooms (fresh or canned), olives, pepperoni, mozzarella cheese, you know any or all of the traditional favorites. Once toppings have been browned, chopped, grated and sauce has cooled slightly, spoon sauce over prepared crust. Then add meats, veggies, and cheeses. Fine if Parmesan are sprinkled on last, cheese won't brown or scorch. Bake in 425 degree oven for 15 to 20 minutes. |
