SWEET POTATO SOUFFLE 
2 c. sweet potatoes cooked and mashed
3/4 c. sugar
1/2 tsp. salt
1 stick butter
1 c. milk scalded
1 tsp. cinnamon
coconut
marshmallows

Add sugar, salt and butter to hot milk. Add potatoes and some coconut in mixture. Put marshmallows and coconut on top of mixture. Sprinkle with cinnamon.

Bake 1 hour at 325°F.
