POTATO PUDDING 
5 lbs. med. potatoes
8 eggs
3 tsp. salt
12 oz. can evaporated milk
1/4 tsp. pepper
1 lb. bacon
1 med. onion, chopped

Fry bacon until crisp, add onion, set aside. Peel and grate potatoes, add eggs, salt and evaporated milk. Add bacon and onion to the potato batter and mix well. Pour into greased baking dish. Bake at 450 degrees for 10 minutes. Reduce to 350 degrees and bake another 1 1/2 hours until ends are crispy.
