CHICKEN ITALIANO PARMESAN 
6 boneless skinless chicken breast halves
1/3 c. grated Parmesan cheese
1/2 tsp. oregano
1 tsp. Italian seasoning
1/2 c. sliced green onions
1 tbsp. butter
1 tbsp. flour
1/2 c. milk (2% or skim)
1/2 pkg. frozen spinach, chopped
1 sm. jar pimento

Combine Parmesan cheese, oregano, and Italian seasoning. On a wax paper, coat chicken in cheese mixture. Arrange chicken in 6x10x2 inch baking dish. Save remaining cheese to add to white sauce.

Cook onion in butter until tender. Add flour, stir in milk. Cook until thickened; add 1/2 package spinach after draining all the water off it. Add pimento, add remaining cheese. Spoon spinach mix over chicken. Bake at 350 degrees for 30-35 minutes. Serves 6. Nice served with brown or wild rice. Low calorie, 200.
