ZUCCHINI BOATS 
2 med. zucchini
1 c. stewed tomatoes
2 tbsp. grated cheddar or white cheese

Slice zucchini lengthwise. Place in frying pan with just enough water to cover vegetables. Boil until soft (about 15 minutes). Place zucchini in loaf pan. Pour stewed tomatoes on top. Sprinkle grated cheese on top. Broil until cheese has melted.
