ZUCCHINI BREAD 
3 eggs, well beaten
1 c. cooking oil
2 c. sugar
2 c. raw peeled grated zucchini
3 tsp. vanilla
3 c. flour
1 tsp. baking soda
1 tsp. salt
3 tsp. cinnamon
1/4 tsp. baking powder
1/2 c. chopped nuts

Combine eggs, oil, sugar, zucchini and vanilla. Mix well. Sift flour, soda, salt, cinnamon, baking powder together and add to zucchini mixture, blending well. Stir in chopped nuts. Grease and flour lightly two 5x9x4 inch loaf pans. Pour batter into pans. Bake at 350 degrees for 1 hour or until bread tests done.
