ZUCCHINI CHERRY BREAD 
2 c. flour
3 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
2 c. sugar
3 eggs
3/4 vegetable oil
2 c. well drained, grated zucchini
1 1/2 c. chopped walnuts
3/4 c. diced fresh cherries

Preheat oven to 350 degrees. Blend flour, cinnamon, baking soda, salt, baking powder and sugar together. Beat eggs in large bowl until thick and lemon colored. Add oil and continue beating for an additional 30 seconds. use a spatula to mix in the zucchini, cherries and walnuts. Add the dry ingredients to this mixture. Blend well. Grease two 8 x 8 loaf pans. Bake until tester inserted in the center comes out clean, approximately 1 hour. Let cool for 15 minutes before turning out on the rack. Cool completely before slicing.
