POPPY SEED CAKE | |
1/4 c. poppy seeds 1 c. buttermilk 1 c. shortening 1 1/2 c. sugar 4 eggs 1 tsp. vanilla 2 1/2 c. flour 1/2 tsp. salt 1 tsp. baking soda 2 tsp. cinnamon 1/3 c. sugar Soak poppy seeds in buttermilk for 2 hours or more. Cream shortening and sugar; add eggs, one at a time, beating well after adding each one. Add vanilla. Add dry ingredients (not the cinnamon and 1/3 cup sugar) alternately with buttermilk-poppy seed mixture. Grease bundt pan very heavy. Place in layers in bundt pan: 1/2 of cake batter, sprinkle 1/2 of cinnamon and sugar mixture over batter, then other half of cake batter and last half of cinnamon-sugar mixture. Bake at 350 degrees for 50 minutes. Let set for 5 minutes before removing from pan. |
