PORK ROULADE | |
1 1/2 lbs. ground pork 1 1/2 c. fresh bread crumbs 2 eggs 3/4 c. milk 1/2 c. catsup 1/4 c. Parmesan cheese 1/4 c. chopped parsley 1 1/2 tsp. oregano 1/8 tsp. garlic powder 1/2 tsp. salt 1/4 tsp. pepper 2 (9 oz. each) pkgs. frozen chopped spinach, thawed 1 c. Ricotta cheese Place ground pork, bread crumbs, eggs, milk, catsup, Parmesan cheese, parsley, oregano, garlic powder, salt and pepper in bowl. Mix for 1 minute on low speed on waxed paper. Flatten pork mixture to a 10 x 14 inch rectangle. Place spinach in a towel and wring until very dry. Place spinach and Ricotta cheese in bowl. Attach bowl and beater. Turn to speed 2 and mix for 1 minute. Spread spinach mixture on top of ground pork mixture. Roll up rectangle, beginning at 14 inch side. Press edges and ends of roll to seal. Place on greased baking sheet, seam side down. Bake at 350 degrees for 1 1/2 hours. Serve hot. |
