DEVILED PORK CHOPS | |
6 pork chops (3/4 inch thick) 1 c. onions, sliced 1 c. green pepper strips 1 can condensed beef consomme', undiluted 1 c. tomato juice 2 tbsp. prepared mustard 1 tsp. Worcestershire sauce 1 tsp. salt 1 c. raw rice 1/4 c. water Trim off all fat and brown chops slowly which takes 15 to 20 minutes. Remove chops. In Dutch oven place 3 chops in bottom, top with 1/2 of onion and green peppers. Repeat with rest of chops, onions and peppers. Combine consomme', tomato juice, mustard, salt, Worcestershire sauce and water. Pour over chops. Sprinkle rice around meat. Bring to boiling. Reduce heat and simmer 1 hour or until chops and rice are tender. To serve fluff up rice with fork. |
