CREOLE SNAP BEANS 
2 lb. fresh green beans
1/4 lb. ham
3 lg. onions, chopped
3 cloves garlic, minced
Approximately 1 1/2 c. water
Salt and pepper

Wash, string and cut beans into small pieces. Fry ham until light brown; remove ham. Pour off drippings, except for 2 tablespoons. Add onions and garlic and cook until onions are soft. Return ham to skillet; add beans, 1/2 cup water and salt and pepper to taste. Cover; turn heat to low and cook for about 1 1/2 hours. During cooking period, occasionally add additional water.
