SEAFOOD CASSEROLE 
1 c. cooked rice
8 oz. cooked shrimp
8 oz. crab meat
1/2 c. green pepper
4-5 green onions
1 c. celery
1 can water chestnuts, sliced and drained
1 c. mayonnaise
3/4 c. tomato juice

Chop celery, pepper, and onions. Break crab and shrimp into pieces. Toss together with rice, water chestnuts, mayonnaise, and tomato juice. Place in 9 x 13 inch baking dish. Sprinkle 4 ounces of cheddar cheese over top. Bake at 350 degrees for 30 minutes. Serves 6.
