REFRIGERATOR PICKLES 
7 c. thinly sliced cucumbers
1 c. thinly sliced onion
1 sweet red or green pepper, thinly sliced
2 c. sugar
2 tsp. non-iodized salt
1 c. cider vinegar
1 tsp. turmeric
1 tsp. mustard seed

Put cucumbers in a large bowl; add onions and sweet pepper. Stir, then add sugar, vinegar, turmeric, mustard seed and salt. Stir.

Refrigerate 48 hours stirring while setting first 48 hours. Pack in jars or plastic containers and store in refrigerator.
