WAYNE'S MARINATED CHICKEN THIGHS 
4 lbs. chicken thighs
10 ozs. Kikkoman soy sauce
Juice and peeled rinds from 2 lemons
1 12 oz. beer (preferably dark beer)
1 medium onion

Trim excess skin from the chicken thighs and set aside. Slice the onion. Mix the soy sauce, beer, lemon juice, rind and sliced onion in a large bowl. Add the chicken thighs and marinate for at least 4 hours. (Overnight is best).

Grill the chicken thighs over a medium heat with the skin side up. Watch for flare-ups, and turn the thighs every 5 minutes. After 30 minutes, remove the chicken skin, and grill for an additional 5 minutes. Chicken is done when the the juices run clear after a fork is inserted. Cover the thighs with aluminum foil, and let rest for 15 minutes before serving.

I've used non-alcoholic beer in place of dark beer. I've also tried lemon lime soda in place of beer. They both work, but the non-alcoholic beer is what I'd recommend.

This is so good and so easy!!! I cut deep gashes in the chicken thighs to allow the marinade to enter inside the chicken meat. I also saved the leftover marinade as a pour over sauce. Outstanding.

Hopefully you boiled the leftover marinade before you served it. Raw chicken juice is a good way to have a visit to the ER.

Once the chicken is done marinating, the marinade is discarded, so there is no risk of marinade contamination.

For such a simple recipe, the chicken was incredibly good. The toughest part is keeping the chicken from burning--it has to be watched carefully. The soy and lemon really add lots of flavor.
