PITA BREAD 
3 c. flour
1 tbsp. sugar
1/2 tbsp. salt
1 pkg. yeast
Warm water

In food processor combine dry ingredients. With blade turning, add warm water in thin stream until dough forms a mass. Let mass beat against sides of bowl for 50 counts. (Can also be made in bowl: use 3/4 cup water and knead for 2 minutes). Let rise in bowl greased with olive oil and cover with warm damp towel for 1 hour. Punch down. Divide into 6 pieces. Let rise under towel for 20 minutes. Roll into 6 inch circles and bake, preferably on slate or stone.

Bake in preheated oven to 425 degrees for about 10 minutes. Turning to brown if necessary.
