PINTO BEAN PIE 
1 c. cooked, mashed pinto beans
1 c. sugar
1 c. milk
3 egg yolks
1 tsp. vanilla
1 tsp. pumpkin pie spice

Combine all ingredients. Pour into unbaked pie crust shell. Bake at 350 degrees for 30 minutes or until knife inserted in center comes out clean. Cover with meringue and bake to a golden brown.
