PINTO BEAN PIE 
1 c. cooked pinto beans
1 (7 oz.) can coconut
1 c. chopped pecans
4 eggs
3 c. sugar
1 tbsp. vanilla
2 sticks melted butter

Mash beans with a little liquid; add to the mixture. Mix all ingredients together and pour into 3 unbaked pie shells. Bake 1 hour in 300 degree oven. Makes 3 pies.
