OYSTER CHOWDER 
2 med. onions
1/4 c. butter
3 c. water
1/2 c. fresh parsley
1 standard pkg. frozen cream style corn
1 stalk celery
1 tsp. sugar
1 c. clam juice
1 1/2 lbs. potatoes
2 t tsp. salt
2 1/2 c. milk
1/4 tsp. freshly ground black pepper
1 1/2 pts. fresh oysters with liquor

Peel and chop onions, chop celery, peel and cut potatoes into 1/2 inch cubes. Heat butter. Add onions and celery, cook until onions are golden. Measure in water and clam juice. Add potatoes, parsley, sugar, salt and pepper. Cover pot and simmer 15 minutes. Add corn and simmer 5 minutes longer. Add milk, oysters and oyster liquor. Bring just to a boil, lower heat; cook gently until oysters plump up and edges curl. Do not overcook adjust seasoning.
