LEMON SQUARES 
1/4 c. powdered sugar
1 c. flour
1/2 c. butter (do not use butter)

Pat into 8" square pan which has been sprayed with Pam. Bake 15 minutes at 350 degrees until light brown.

Beat 2 eggs, add the juice of 1 lemon (2 1/2 tablespoons) and grated rind of 1 lemon. Add 3/4 cup granulated sugar, 1/2 teaspoon baking powder and 2 tablespoons flour. Mix and pour over hot pastry. Bake at 350 degrees for another 20 to 25 minutes or until top looks dry. Sprinkle top with powdered sugar. Cut into serving pieces.
