HAM - SCALLOPED POTATOES 
2 big slices of fresh ham, cubed
6 potatoes, peeled & chopped
Salt & pepper to taste
2 c. grated cheddar cheese
1 (10 oz.) can cream of mushroom soup (or celery soup)
Paprika to taste

Put half of ham, potatoes and onion in crock pot. Sprinkle with salt and pepper, then grated cheese. Repeat with remaining half. Spoon undiluted soup over top, sprinkle with paprika. Cover and cook on low for 8 to 10 hours or on high for 4 hours. Add a tossed salad and you're all set for any easy, quick meal!
