HAMBURGER SALAMI 
5 lb. hamburger, not lean, not chuck, just plain hamburger
2 1/2 tsp. liquid smoke
2 1/2 tsp. mustard seed
5 tbsp. curing salt or canning salt
3 tbsp. whole pepper pods

Mix well. Roll into logs. Place on rack. Bake 10 hours at 150 degrees.
