CHINESE SWEET-AND-SOUR SPARERIBS 
2 c. water
1 1/2 lbs. spareribs, cut into 1 inch lengths
1/4 c. soy sauce
1 tsp. salt
1 tsp. sugar
2 tbsp. sherry
3 tbsp. each sugar and cider vinegar
2 tbsp. cornstarch
1/2 c. water

Heat a heavy pan, add water, ribs, soy sauce and salt; when mixture boils, reduce heat and simmer for 1 hour. Add 1 teaspoon sugar and sherry. Turn heat high and continue to cook until the liquid is all evaporated. Blend remaining ingredients and pour slowly over ribs. Cook about 2 minutes. Place ribs on a flat dish and top with sauce. Makes 3 or 4 servings.
