BREAKFAST COFFEE CAKE 
1 1/2 cups flour
1/4 cup sugar
2 1/2 tsps. baking powder
1/4 cup shortening
3/4 cup milk
1 egg, beaten
1/4 cup brown sugar
1/4 cup chopped nuts
2/3 cup jam, optional

Combine flour, sugar, baking powder, shortening, milk and egg. Beat with fork for 50 strokes. Pour into a greased 9 inch square baking pan. Sprinkle top with brown sugar and chopped nuts. Also, add jam if you desire. Bake at 375 degrees for 25-30 minutes. Serve hot.
