| GRANDMA HAMM'S BUTTERMILK BREAKFAST CAKE | |

2 c. flour 2 c. brown sugar 1 tsp. cinnamon 1/2 tsp. salt 1/2 c. shortening Mix ingredients to make crumbs. Remove 3/4 cup for crumb topping. CAKE: 1 egg, slightly beaten 1 c. buttermilk 1 tsp. vanilla 1 tsp. baking soda (mix in buttermilk) Mix cake ingredients separately. Add remaining crumbs to cake batter and top with the 3/4 cup crumbs. Bake about 25 minutes at 350 degrees. | |

After searching for buttermilk cake recipes, I found this one. I used an 8" square pan and needed longer to bake it. I used Crisco and added raisins. It came out great. It is simple to make, great with morning coffee and kept well overnight. My son enjoyed it. If there is an easier recipe, I haven't found it.
