CHILI RELLENOS 
3 (4 oz.) cans whole green chilies, oven roasted in the can
1/2 lb. sharp cheddar cheese, grated
1/4 lb. Monterey Jack cheese, grated
3 eggs
2 c. milk
1 tsp. salt
4 tbsp. flour

Seed and cut chilies. Arrange in 9 x 13 dish. Sprinkle cheese over them. Beat eggs, milk, flour, and salt. Pour over cheese. Bake at 350 degrees for 40 minutes until it sets.
