BAKED STUFFED POTATOES 
3 lg. baking potatoes
Vegetable oil
1/4 c. butter, melted
1/4 c. milk
3 tbsp. commercial sour cream
2 tbsp. chopped onion
1 1/2 tsp. parsley flakes
1/4 tsp. dry mustard
1/8 tsp. pepper
2 slices American cheese, cut into thin strips
Paprika

Scrub potatoes thoroughly and rub skin with oil. Bake at 400 degrees for 1 hour or until done. Allow potatoes to cool to touch. Cut potatoes in half lengthwise. Carefully spoon out pulp leaving shells intact. Spoon pulp into a mixing bowl and add remaining ingredients except cheese and paprika. Beat with an electric mixer then garnish with cheese strips and sprinkle with paprika. Bake at 400 degrees for 15 minutes. Serves 6.
