CRUNCHY APPLE PIE 
2 c. chopped cooking apples
1/2 c. firmly packed brown sugar
1/2 c. granulated sugar
1/2 c. all purpose flour
1 egg yolk, beaten
1/2 tsp. vanilla extract
1/2 tsp. lemon juice
1/2 c. chopped pecans
1 egg white, beat until foamy
1 (9 inch) unbaked pie shell

Put apples in a large bowl. Add sugar, flour, egg yolk, vanilla, lemon juice and pecans. Mix well. Add egg whites. Stir well and pour mixture into unbaked pie shell. Bake at 350 degrees for 30 to 45 minutes or until apples are tender and brown. Makes 1 (9 inch) pie.
