DIRTY RICE 
1 lb. hot sausage
1/2 c. chopped red bell pepper
1/2 c. chopped celery
1 sm. chopped onion
1 tbsp. poultry seasoning
1/2 tsp. sage
1 can chicken broth

Cook rice about 5 minutes (so it is still firm). Set aside. Brown sausage, pepper, celery and onion. Pour off fat and add rice, sage, seasoning and broth. Place in baking dish and bake at 350 degrees for one hour.
