SMOTHERED CHICKEN 
1 (2 lb.) dressed fryer
1/2 c. cooking oil
1 c. chopped onions
1/2 c. chopped celery
1/2 c. cold water
Salt
Black pepper
Red pepper

Cut up chicken; season with salt, black and red pepper. Fry in oil until golden brown. Remove some of the oil; add onions and celery to fried chicken. Cook about 5 minutes. Add 1/2 cup water; cover pot and simmer over very low heat until chicken is tender. Serves 4.
