TEXAS CAVIAR 
1 (14 oz.) can black eyed peas, drained
1 (15 1/2 oz.) can white hominy, drained
2 med. tomatoes, seeded & chopped
4 green onions, very thinly sliced
2 garlic cloves, minced
1 med. green pepper, finely chopped
1/2 c. chopped onion
1/4-1/3 c. chopped fresh cilantro or parsley (as desired)
1 c. Pace Picante Sauce

Combine all ingredients; mix lightly. Cover; chill at least 12 hours or up to 24 hours, stirring occasionally. Drain. Makes 7 cups.
