SALLY'S POTATOES 'N CARROTS 
2 1/2 c. grated raw potatoes (can use red potatoes)
1 1/2 c. grated raw carrots
1/2 c. grated onion
1 can cream of celery soup, undiluted
1/2 c. milk
Salt & pepper
1/2 c. grated cheese

Heat oven to 375 degrees. Combine potatoes and onion in buttered 9"x13" dish. Add carrots. Blend soup, milk, salt and pepper. Pour over vegetables. Cover and bake 1 hour. Uncover and sprinkle with cheese. Serves 8.
