PERFECT CORNBREAD 
1 c. sifted flour
1 c. cornmeal
1/4 c. sugar
3/4 tsp. salt
4 tsp. baking powder
2 eggs
1 c. milk
1/4 c. shortening (bacon fat is best)

Sift flour, sugar, salt and baking powder together. Add cornmeal, milk, eggs and shortening and beat, leaving it slightly lumpy. Heat fat in a 9x13 inch pan or baking dish until hot.

Measure 1/4 cup and stir into batter, leaving plenty in pan to come up around top of batter. Bake until light brown. Southern way.
