BREADED LEMON FISH FILLETS 
1/2 c. crushed crackers (20)
1/4 tsp. salt
1/8 tsp. pepper
1/4 c. melted butter
2 tbsp. lemon juice
1 lb. fish fillets, thawed
Paprika

Reserve 2 tablespoons cracker crumbs. Mix remaining crumbs with salt and pepper. Mix butter and lemon juice. Dip fish into butter mixture, then into cracker crumbs. Arrange fish with thickest parts to outside edge of microwave rack in baking dish. Sprinkle with paprika. Microwave, uncovered on high for 2 minutes. Rotate baking dish 1/2 turn and microwave 2 to 4 minutes longer. Sprinkle with reserved cracker crumbs. Garnish with lemon slices.

Since microwave ovens vary in power, you may need to adjust your cooking time.
