BASIC SWEET DOUGH 
1 c. milk, scalded
1/4 c. shortening
1/2 c. sugar
2 tsp. salt
4 3/4 c. flour
1 tsp. grated lemon peel
2 cakes, pkgs yeast
1/4 c. lukewarm water
2 well beaten eggs

Combine scalded milk, shortening, sugar and salt. Cool until lukewarm. Stir in 2 cups flour and beat smooth. Add yeast softened in the water and the eggs. Mix thoroughly. Add 2 1/2 cups flour and knead 6 to 8 minutes, using the remaining 1/4 cup flour for kneading in. Place in greased bowl and set in warm place until double in bulk. Punch down and divide in half to make two tea rings, or may be used for cinnamon rolls.
